GF blondies
like a brownie but not
If you are after a Nut FREE, Dairy FREE, Gluten FREE treat, you may have just found what you’re looking for. Perfect for School Lunch Boxes. But please note, they do have a lot of Tahini in them so if you’re not a fan of Tahini, maybe lessen the amount and up the amount of sweetener.

WHAT YOU’LL NEED
2 Eggs
4 - 5 Tbs Rapadura Sugar (or sweetener of choice)
4 Tbs Ghee or Butter (Melted)
1 Cup Organic Tahini (or Nut Butter)*
3 Tbs Coconut Flour
1/4 Cup Coconut Cream
1/4 Cup Water
1 Tsp Baking Powder
2 Tsp Vanilla Essence
1/3 Cup Cacao Chips
Pinch of Salt
WHAT TO DO
Preheat the oven to 170ºC.
Line a baking tray with baking paper.
In a large bowl, whisk together the Eggs and Sugar till they become thick and creamy, this may take a minute or 2. Then whisk in Ghee, till nice and creamy.
Add the rest of the ingredients except the Cacao Chips and stir together.
Gently stir through Cacao Chips leaving a few to sprinkle on top.
Pour the mixture into the prepared tin and sprinkle with Cacao Chips.
Bake for 25 mins or firm to touch.
Enjoy..
* I like to half Tahini and half Nut Butter.
NOTE
Make sure all ingredients are at room temperature before you start mixing.
You could also use nuts instead of Cacao Chips
