a family favourite

The kids absolutely love these as an easy snack, I often make them on my Sunday food prep day so I have them ready for school lunches. My kids don’t mind eating them cold. They are nice with a side of Golden Gut Healing Rice which my kids also love to have in their lunch box.

WHAT YOU’LL NEED

500g Chicken Thighs or Breast (Cut into Bite Size Chunks)
1 cup Tapioca Flour
0.5 cup Desiccated Coconut
0.5 cup Almond Meal
0.5 Tsp Salt
Coconut Oil for Frying

MARINADE

2 Large Garlic Cloves (Crushed)
3 Tbs Coconut Aminos
1 Tsp Smoked Paprika
1 Tsp Salt
1 Lime (Zest and Juice)

WHAT TO DO

Mix Marinade ingredients into a large bowl, then add chicken and toss until well coated. Leave marinate for 20 mins or more if you have time.

Then in a seperate bowl mix together, Tapioca, Coconut, Almond Meal and Salt. Then shake off the excess marinade from the chicken then coat the chicken in the dry ingredients. Ensure meat is coated all over.

Half-fill a large heavy-based saucepan with Coconut Oil and set over medium heat. Once you have heated the oil test it by putting in a piece of chicken, if it sizzles around the edges you are good to go.

working in batches, lower the chicken into the hot oil and fry, turning halfway through, for 4-5mins or until golden brown and crisp all over. Remove and place on Paper Towel to drain.
